- 45 ml Heart of Scotland Gin Original/London Dry or Navy Strength
- 15 ml Freshly squeezed lime juice
- 15 ml Simple syrup
- 30 ml Soda Water to taste 30 ~60ml per cocktail
- 2 Handful Ice cubes crushed or small
🧊 Simple Syrup
- 1 Cup Water
- 1 Cup Sugar
🌿 Garnish
- 3 Sprigs Fresh mint sprigs

Method
- Simple Syrup:Combine sugar and water in a small pan; gently bring to a boil while stirring until fully dissolved. Cool completely before using. Store in the fridge (up to 2 weeks).
- Cocktail Time:In a shaker filled with ice, combine gin, lime juice, simple syrup, and mint sprigs. Shake vigorously for 10–15 seconds to chill and infuse evenly. Strain into a highball glass filled with fresh ice. Top with soda water and gently stir to combine.
