Cocktail Time:In a shaker filled with ice, combine gin, lime juice, simple syrup, and mint sprigs.Shake vigorously for 10–15 seconds to chill and infuse evenly. Strain into a highball glass filled with fresh ice. Top with soda water and gently stir to combine.
