- 50 ml Heart of Scotland Gin Navy Strength or London Dry
- 25 ml Fresh lemon juice or 1 lemon, quartered, classic smash style
- 15 ml Simple syrup 1:1 (or 1 tsp sugar)
- 4 - 6 Sprigs Fresh mint sprigs leaves reserved, plus a nice top for garnish
- 30-60 ml Soda water to taste
- 1 Handful Crushed ice
🌿 Garnish
- 1 Swirl Lime swirl

- 1 Balloon glass or rocks glass
- 1 Shaker or sturdy mixing glass
- 1 Muddler Or Wooden Spoon

Method
- Muddle: In a balloon or rocks glass (or in a shaker), lightly muddle the lemon (juice or quarters) with the simple syrup and a few mint leaves—release oils and aroma, don’t shred.
- Build & Chill: Add the gin and crushed ice. Stir to lift citrus oils, or shake until the outside of the shaker feels cold (about 10–15 seconds).
- Serve: Strain over fresh ice into a rocks glass for a clean presentation. For a rustic finish, pour all components including mint—into the glass.
- Top off: Add 30–60 ml soda water to taste and give a gentle single stir.
