  • What You'll Need:
  • 1 Highball glass or large cocktail glass
  • 1 Measuring jigger
  • 1 Bar spoon

Ingredients

🧪 Ingredients:

  • 50 ml Heart of Scotland Gin
  • 60 ml Passion fruit juice or passion fruit drink mix
  • 5–6 drops Lemon or Orange Bitters
  • 1 serving Soda Water

🌿 Garnish

  • 1/2 a fresh passion fruit pulped

Instructions

  • Build the drink:
    Fill your glass with ice.
Add the gin, passion fruit juice or mix, and lemon bitters.
  • Bring in the fizz:
Top with soda water and stir gently.
This keeps the drink light, fresh, and refreshing.
  • Balance to taste :
Add a little extra passion fruit if you prefer a sweeter serve.
For a lighter finish, simply top with a little more soda water.
  • Garnish :
Finish with fresh passion fruit pulp or a physalis.
Fresh garnish adds colour, texture, and a more vibrant tropical feel.
1/2 fresh passion fruit, scooped out
  • Best served fresh:
Serve straight away while nicely chilled.
Ideal for warm days, relaxed evenings, and simple at-home cocktails
Notes:
  • Fresh passion fruit pulp gives the drink a more vibrant, tropical finish and adds great visual appeal.
  • If you want a slightly sweeter serve, use a passion fruit drink mix.
  • For a lighter, fresher version, use passion fruit juice and finish with a little extra soda water.

Tips:
  • Serve well chilled for the best result.
If using a sweeter concentrated passion fruit mix, you may want a little less in the glass.
  • If using a lighter passion fruit juice, you can use a little more to keep the flavour bold.
  • This cocktail is best made fresh and served straight away.
