Alcohol-Free Gin Recipe

Our Zero base is a juniper-led alcohol-free concentrate with a bright citrus lift and peppery finish — made to serve like a proper G&T when topped with tonic.

Equipment

  • What You'll Need:
  • 1 Pan around the 2 litres in size
  • 1 Brita Water Filter Or Coffee filter papers
  • 1 Measuring jug
  • 1 Funnel + clean bottle/jar
  • 1 Thermometer helpful but not essential

Ingredients

🧪 Ingredients:

  • 900 ml Water
  • 30 g Juniper berries organic works best
  • 6 g Coriander
  • 2 g Angelica root optional but helps “gin” flavours bind
  • 1 g Black peppercorns

🍋 Citrus Lift

  • 3 g Dried bitter orange peel or peel of ½ orange, no pith
  • 3 g Lemon peel

🧂 Sweetening / Balance (optional)

  • 6-10 g Sugar add to taste
  • 1 Pinch Sea Salt optional

Instructions

  • Build the infusion:
    Lightly crush the juniper.
    Add the water juniper coriander pepper angelica to a pot.

  • Warm—don’t boil
    Heat to 70–75°C and hold 20 minutes.
  • Steep the juniper longer (but keep it clean):
    urn off the heat. Add the orange + lemon peel, cover, then steep for 2 hours.(Longer steep = more flavour. Adding peel after heat keeps it bright, not bitter.)
  • Strain for clarity
    Strain through a Brita water filter a few times or run through a coffee filter for a clean concentrate.

  • Balance the finish:
    While slightly warm, stir in sugar + salt to taste until fully dissolved
  • Bottle + chill:
    Bottle, chill, and it’s ready to pour, keeps in fridge for around a week

Notes:
  • You’ll get brightness from citrus oils. If you want extra “snap”, add a tiny squeeze of fresh lemon in the glass rather than in the bottle.
  • This is not shelf-stable — it’s a fresh fridge concentrate
Tips:
  • If it ever tastes too bitter, reduce steep time to 60–90 minutes next batch.
  • Want more juniper punch, do a cold boost: add 4–6 g lightly crushed juniper to the finished bottle, fridge steep 8–12 hours, then strain again.
  • Keep everything very clean (hot water rinse / sterilise bottles) for best shelf life.
Shelf Life
5–10 days in the fridge (best in the first week). Discard if it goes cloudy, fizzy, or smells “off”.
