Margarita glass typically hold 350ml, cocktail shaker and strainer (the one that looks like a sieve works best)
Separate the egg yolk from the white this typically gives you 35ml of egg white it’s not exact so don’t worry about this too much, place the white in the shaker and save the yolk for use in something else (for our vegan friends uses aquafaba as an alternative)
Place ice into the shaker the bottom cup should be half full of ice.
Add 50ml of our gin, 25ml Fresh or shop brought lemon juice, and 5 drops of bitters into the shaker.
Seal the shaking cups then shake vigorously for at least 20 seconds until the outside of the shaker is cold to the touch
Crack the shaker and then strain into the glass using a sieve type strainer discarding the ice from the shaker , then top off the with soda water 50~100ml depending on your tastes and glass size.
Garnish with Lemon Spiral
Tip
To get a perfect lemon spiral, we use a potato peeler on an unwaxed lemon then run around the lemon such that a continuous 3 ~ 4 inch peel is achieved, then with a sharp knife remove all the pith, removed the edges and cut into nice straight pieces. To get a perfect spiral wrap around either a pencil or metal straw and level on the chopping board for a few minutes this allows the lemon to hold its spiral shape
