Ingredients
Ingredients (makes 1 cocktail)

45ml (3 parts) Heart of Scotland Navy Strength Gin or Our London Dry Gin

15ml (1 part) freshly squeezed lime juice

15ml (1 part) simple syrup (see recipe in tab if you dont have any made)

3 fresh mint sprigs

30ml ~60ml (2 ~4 parts ) soda water to taste

Ice cubes 2 hand full crushed or small in size works best with a tall glass
Simple Syrup (makes enough for about 12 servings)

- 1 Cup granulated sugar
- 1 Cup water
Garnish
- Lime slices or a mint sprig
Step 1 - Simple Syrup Recipe
Combine 1 cup of granulated sugar and 1 cup of water in a small saucepan.
Bring to a gentle boil, stirring until all the sugar has dissolved.
Let it cool before using. Store in a sealed container in the fridge for up to 2 weeks.
Step 2 - Cocktail Time
Add gin, lime juice, simple syrup, and mint sprigs (see tip) to a cocktail shaker filled with ice.
Shake vigorously for 10–15 seconds to chill and infuse the flavours.
Strain into a highball glass filled with fresh ice.
Top with soda water and gently stir to combine.
Garnish & Tips
Garnish with sprigs of mint and slice or two of lime

Shaking Tip
Hold the shaker with both hands—one on the base and one on the top—to ensure a firm grip. Shake with a controlled, vigorous motion to properly mix and chill the ingredients while incorporating just the right amount of dilution.
Also Tear the mint leaves this increases the oils and flavours infused in to the cocktail
